This is a one-of-a-kind smoker that I spent about 3-years building off & on. The smoker box is from a alto-sham convection oven, very insulated and all stainless. The smoker box oven sets upon a frame and hidden within it (where the electionics and fans of the oven once were) is a charcoal box that feeds charcoal over-time to a fire box where wood chunks can be added for desired smoke. Heat is controlled with a BBQ Guru stoker fan that kicks on and off to keep the smoker going constant. A 20 lb bag of charcoal will smoke for around 12 hours with only periodic checking to keep ashes clean.
I have used this for competition cooking and love the smoker, but it is just too big and heavy to move into and out of my trailer for competitions. It is an awesome cooker that would be great for someone's outdoor kitchen area or can be moved in and out of any area with hard surface.
I have a 75 page book that details with pictures all the steps of this smoker conversion build project; if interested I can get a digital copy of these details email to you. Commercial Gravity Charcoal smokers are available to purchase ranging from $3700 and up... I wanted one and so this is how I got one.
The price inlcudes the BBQ Guru Controler which has one temp probe to control the pit and another that can be used to moniter internal meat temperature. The GURU unit alone is a $200+ value if purchased brand new.
